Homemade Tortillas and Chicken Quesadillas

I love making as much of my food as possible. Homemade food tastes exponentially better than the ones you buy from the supermarket and depending on how refined your palate is; homemade food is also more economical.

That is why I make my own tortillas.  Although I live in San Francisco – a city that offers a plethora of options for fine food – but for the price I pay, I can also make at home in under 30 minutes.  Without further adieu, here you go – homemade Tortillas and a companion recipe for some chicken quesadillas.

This recipe will yield between 10-15 tortillas.

Tortillas ingredients

3 cups of all-purpose flour

1 tsp of salt and 1 tsp of baking soda

1 cup of warm water (about 120F)

⅓ cup of oil (preferably flavor-neutral oil like canola oil)

Instructions:

    • Combine flour, salt and baking soda in the mixer, pulse it a few times
    • Add water and mix the ingredients in 1-2 setting of your KitchenAid for about 30-60 seconds
      • Add oil and mix until a dough is formed
    • Knead the dough for about 5 minutes
    • Let it rest for 20 minutes
    • Divide up the dough into small balls.  I find pinching from the big dough a small section of dough and roll it into a dough that’s roughly 1.5 inches in diameter. Continue the same process until you use up the entire dough.
      • Flatten each dough with a rolling pin.  You do have all the control in the world as to how thick you’d like your tortillas to be.  
    • I start heating up my cast iron as I roll my tortillas
  • Once the cast iron is hot enough, add oil.  Once the oil is hot enough, place your flattened dough into the hot pan.  It will look something like this:

Chicken quesadilla

    • For this recipe, I actually use leftover chicken thighs and cut them into small pieces
    • Add oil and heat up the chicken thigh pieces in my cast iron (should take roughly 2-3 minutes if your cast iron is already hot), scoop the chicken in a bowl.
    • After cleaning your cast iron or in a separate pan, heat up the freshly made tortillas, spread either mozzarella or Mexican cheese all over the tortillas.  Then add enough chicken to cover one side of the tortillas.
  • Fold the tortilla in half. There you have it, your fresh chicken quesadilla with a homemade tortilla.
